Honey Roasted Veggies
4-5 medium carrots, cut into sticks
3 cups sugar snap peas, trimmed
3 T extra virgin olive oil
3 T raw, unfiltered honey
pinch of sea salt
fresh ground pepper to taste
black sesame seeds to garnish
Pre-heat oven to 375 degrees. Prep the veggies. In a large baking dish (I used glass) place veggies and pour over all the seasonings except for the sesame seeds. With a wooden spoon mix until well coated and evenly distributed around the dish. Bake for 35-45 minutes. Let cool and serve garnished with sesame seeds.
The honey/evoo mix can be applied to pretty much any roastable veg.
